New Meat Hygiene Regulations were introduced in 2006 which apply to Wild Game. Stalkers need to be aware of these and guidance is available from the Food Standards Agency (FSA). The FSA guidance describes the construction and operational requirements for deer larders. It is increasingly evident that some form of active chilling will be required, in a properly designed deer larder.
